Easy Vegetarian Wraps

Ingredients

For a SUPER EASY meal (makes about 5)

·       Salad bag

·       1 8oz can of white beans

·       Cheese crisps

·       Spinach tortillas

For more customization

·       Romaine lettuce (chopped into approx. 1in pieces)

·       1 8oz can of white beans

·       Cheese crisps

·       Your dressing of choice

·       Spinach tortillas

·       Additional fixings (cherry tomatoes, raisins, nuts, parmesan; etc.)

Instructions

1.       Cook the beans in accordance with the packaging instructions, set aside

2.       Make the salad and toss it in your preferred dressing, add any additional fixings to it if you are customizing it

3.       Mix in the beans and your preferred amount of cheese crisps, set aside

4.       Warm up the spinach tortillas in a pan, get it to your preferred crispiness

5.       Set tortilla on a plate, spoon out about one cup and a half of the salad onto the tortilla

6.       Fold in the sides of the tortilla and roll it up

7.       Enjoy!

About this meal

I always hate having to skip through the blog post to the recipe, so I put the recipe at the top for those only here for it. Though this part will be brief, I wanted to give you all a good idea what to expect as far as the recipe posts go. I have recently made the switch to become a vegetarian and have been going strong for a few months now. A challenge I had often found is that I cannot find fast and simple recipes for my diet and if any others are experiencing the same trouble, I wanted to share the recipes I have discovered. If there’s something I hate nearly more than anything, it would be meal planning. Additionally, my goal with these recipes is to make enough to last me the week at least. I hope my discoveries will help you all and even if they don’t, I just like writing about them.
